Salmon Filo Parcels

Salmon Filo Parcels is a firm family favorite, especially as you don’t have to make the pastry or even roll it out for that matter.


4 Skinless Salmon Fillets (125g each)
40g unsalted butter
200g Filo Pastry (if you are using frozen please thaw before use)
1 Lemon Rind and Juice


Lets Cook.
1.Preheat the oven 190c (375F) Gas 5
2.Lightly grease a baking tray.
3.Rinse the salmon fillets under the cold tap and dry with some kitchen towel.
4.Place the butter into a bowl and grate the lemon rind (using the small part of the grater) and add to the butter.
5.Unwrap the filo pastry and separate and count the sheets
6.Equally divide the pastry between four for each parcel.Arrange into 4 rectangles about 30x25cm you may need to overlap or fold the sheets.
7.Put piece of fish in the middle of each rectangle and top with some of the lemon butter, spread across the fish.Squeeze some lemon juice over the fish.
8.Fold the pastry over the fish as if you are wrapping a present and then fold the ends underneath.
9.Place the parcels onto the prepared baking tray and ask an adult to help you put it into the oven.
10.Bake for about 25 minutes until golden brown.
11.Remove from the oven and serve with a lemon wedge,crisp salad or new potatoes and broccoli.

Make sure you unroll the pastry at the last minute so that you don’t dry it out.The salmon is cooked to perfection as it steams inside the filo parcels,
You could also add a little dill to the butter for extra flavor.
