This is a very simple but delicious soup very comforting on a cold day.
For the best flavor use a homemade stock or a good quality shop bought one.
4 Medium Potatoes peeled and diced(about 500g)
2 Leeks Washed and sliced
3 Pints of chicken or Vegetable Stock
3 Tablespoons of Garlic infused Olive Oil.
1.Par boil the potatoes for 10 minutes in a pan of lightly salted water.
2.In another pan simmer the stock.
3.In the third pan add the sliced leeks with the oil and cook on a medium heat until the leeks are soft do not let the leeks brown.
4.Drain the Potatoes and add to the leeks, stir and season with salt & pepper.
5.Add the stock to the leeks and potatoes (be careful as the stock will bubble in the pan when you do this so add a little at a time).
6.When you have added all of the stock bring to the boil and simmer for about 5 minutes until the potatoes are fully cooked.
7.Remove the soup from the stove and if you have one put the soup into a blender and bit at a time and blend until smooth.
(If you don’t have a blender you could always use a potato masher to help thicken).
8.Once you have blended all of the soup it is ready to serve.
You could sprinkle some chopped flat leaf parsley or top with croutons for extra flavor and texture.
