Bubble and Squeak

4 Tbsp Vegetable Oil                                                                                           60ml Vegetable Oil

1 Medium Onion Chopped                                                                                   1 Medium Onion Chopped

450g Floury Potatoes (mashed)                                                                           2 Cups Floury Potatoes Mashed

225g Cooked Cabbage                                                                                        1 Cup Cooked Cabbage

Serves 4



Preparation: 5 Minutes                                                                                   Cooking Time: 30 Minutes




  1. Heat 30ml / 2 Tbsp of oil into a heavy frying pan.


  2. Add the onion to the pan and cook over a medium heat, stirring frequently until softened but not browned.


  3. In a large bowl, mix together the potatoes and cooked cabbage and season with salt and plenty of pepper to taste.


  4. Add the potato and cabbage to the pan with the onions, stir well and then press the vegetable mixture into a large cake.


  5. Cook over a medium heat for about 15 minutes, until the cake is browned underneath.


  6. Place a large plate over the pan, and, holding it tightly turn them both over together. Lift off the frying pan, return it to the heat and add the remaining oil.


  7. When the oil is hot slide the bubble and squeak back into the pan, brown side upper most.


  8. Cook over the heat for 10 minutes or until the underside is golden.


  9. Serve hot in wedges.



Cook’s Tips: Bubble and Squeak is a great way to use left over vegetables from a roast dinner, it can be moistened with leftover gravy.
