450g Floury Potatoes (mashed) 2 Cups Floury Potatoes Mashed
225g Cooked Cabbage 1 Cup Cooked Cabbage
Serves 4
Preparation: 5 Minutes Cooking Time: 30 Minutes
- Heat 30ml / 2 Tbsp of oil into a heavy frying pan.
- Add the onion to the pan and cook over a medium heat, stirring frequently until softened but not browned.
- In a large bowl, mix together the potatoes and cooked cabbage and season with salt and plenty of pepper to taste.
- Add the potato and cabbage to the pan with the onions, stir well and then press the vegetable mixture into a large cake.
- Cook over a medium heat for about 15 minutes, until the cake is browned underneath.
- Place a large plate over the pan, and, holding it tightly turn them both over together. Lift off the frying pan, return it to the heat and add the remaining oil.
- When the oil is hot slide the bubble and squeak back into the pan, brown side upper most.
- Cook over the heat for 10 minutes or until the underside is golden.
- Serve hot in wedges.
Cook’s Tips: Bubble and Squeak is a great way to use left over vegetables from a roast dinner, it can be moistened with leftover gravy.
