Making your own Puff Pastry can be very satisfying but also time consuming, so if you don’t have the time I suggest you buy Ready Made Pastry it can be bought either fresh of frozen, the only problem with the frozen pastry is that you will have to wait for it to defrost before you can use it.
Here are a selection of Puff Pastry Recipes that have been tried and tested by myself, family,friends and visitors of this website.

Eccles Cakes
6oz Puff Pastry
Egg White to Glaze
1oz Butter
4oz Currants
1-2oz Mixed Peel, chopped
1oz Sugar
1/2 Level Tsp Ground Nutmeg
1/2 Level Tsp Mixed Spice
A Little Caster Sugar for dusting
Pre-heat your oven to 425F/Gas Mark 7.
To make the filling, mix the butter with currants,peel,sugar and spices.
Roll out the pastry 1/8 inch thick, and cut into large rounds about 5-6 inches across with a plain cookie cutter.
Place a spoonful of filling on each round, damp the edges of the pastry and draw them together to enclose the filling.
Turn the smooth side up, flatten with a rolling pin, so that the currants just show through the pastry.
Mark across with 2-3 cuts and place on a baking tray brushing with a little egg and sprinkling with the extra sugar.
Bake near the top of the oven for about 15 minutes, until the pastry is golden.
Chicken Vol-Au-Vent
8oz Puff Pastry
Beaten Egg to glaze
1/2 Pint Of White Sauce (Coating Consistency)
8oz Cooked Chicken, Diced
2oz Mushrooms, Sliced and sauted
Salt & Pepper
Pre-heat your oven to a very high heat 450F/Gas Mark 8.
Either make or buy your puff pastry and roll out 1 inch thick and cut into a large oval with a Vol-Au-Vent Cutter or any shape you require with a cutter of your choice. You could also use a knife to cut out your shape but do not twist or drag it.
Make a second mark 1.2-1 inch away from the outer edge to form a lid, cutting only half way through the pastry.
Flake and scallop the outer edge of the pastry and mark a criss-cross pattern lightly on the lid with a knife.
Transfer the pastry to a baking sheet and brush the top of the pastry only with beaten egg. (if it runs down the cuts sides it causes uneven rising.)
Bake in the centre of the oven, to allow room for the pastry to rise, for 30 minutes, reducing the heat to moderate, 350F/Gas Mark 4 after 20 mniutes if the pastry is browning too much.
When it is cooked, loosen and remove the lid and scoop out any soft pastry from inside.
Whilst leaving the shell to cool, heat the white sauce, add the chicken and mushroom and season well.
Fill the case with the mixture, replace the lid and reheat in a the oven on the moderate heat 350F/Gas Mark 4 for about 20 minutes before serving.
Plum and Almond Tart
One of the easiest Puff Pastry Recipes to make with kids.
I make this recipe using ready rolled puff pastry but you could make your own if you wish.
This simple but delicious tart will look like it has been made in a French Patisserie, and your friends and family will not believe how easy it was to make, which is why it is great for kids to make.
This recipe will make a tart for 4 people, or you could serve it to more people if you cut it into smaller portions!!!
375g Reday Rolled Puff Pastry
115g Marzipan
6-8 Plums, Pitted and sliced
Pre-heat the oven to 190C/375F/Gas Mark 5.
Unroll the pastry on to a large baking sheet. Using a small knife, score a border 2 inches from the edge of the pastry all round, without cutting all the way through.
Roll out the Marzipan into a rectangle, to fit just within the pastry border, then lay it on top of the pastry, pressing down lightly with the tips of your fingers.
Arrange the sliced plums on top of the marzipan and bake for 20 minutes, or until the pastry is risen and golden brown.
Carefully transfer the tart to a wire rack to cool slightly, then cut into squares or wedges and serve.
