Vanilla Cupcake Recipe

An all time favorite this vanilla cupcake recipe make the best vanilla buttercream cupcakes, great for kids parties, kids love to decorate them with bright decorations and candies.
You will make 12 Vanilla Cupcakes if you follow this recipe.

115g Unsalted Butter
115g Caster sugar
2 Eggs
115g Self-Raising Flour
1 Tsp Vanilla Extract
2 Tbsps Milk

To Decorate
85g Unsalted Butter
225g Icing Sugar, Sifted
1 Tbsp Milk
1/4 Tsp Vanilla Extract
Yellow Food Coloring
Colored Sugar Sprinkles or Candies of your choice.

Preheat the oven to 180C/350F/Gas Mark 4, and line your cupcake tins with paper liners.
Beat the butter and sugar together in a bowl until pale and fluffy, then beat in the eggs one at a time.


Sift the flour into the mixture and fold in, stir in the vanilla and milk.
Spoon the mixture into each paper case and bake in your preheat oven for about 18 minutes, until the cakes have risen and are golden in color.

Insert a skewer in to each cake and if it comes out clean then the cakes are cooked.
For the buttercream, place the butter in a bowl and beat until smooth and creamy. Add the icing sugar, milk, vanilla and food coloring and beat together until mixed well and you have got the color you require.
Swirl your frosting on top of the cupcakes and sprinkle with your colored candies or sprinkles.
