One of the most popular Shortcrust Pastry Recipes in our house is Cornish Pasties so here is our recipe.

12oz Shortcrust Pastry
12oz Stewing Steak
1 Onion, Finely chopped
1 Large Potato, Finely Diced
Salt and Pepper
Milk to Glaze

Make the pastry in the usual way.
Trim the meat, cut into 1/4-1/2 inch pieces and mix with the onion, potato and seasoning.
Divide the pastry into 4 portions and roll out into 8 inch rounds (I use a plate as a guide.)
Divide the filling between the 4 pastry , place in the center leaving the pastry edges free.
Moisten the egdes and draw the pastry together to join on top.
Ease the filling across the base and press the edges firmly together. Flake with a knife and twist in a rough wavy line.
Place on a baking sheet, brush with milk and cook in the center of the oven (425F/Gas Mark 7) for 15 minutes, then reduce the heat to 325F/Gas Mark 3 and continue cooking for about an hour longer, until the filling is cooked.
If the pastry gets rather brown, cover the pasties with some greaseproof (waxed) paper.
Remove from the Cornish Pasties from the oven and wrap in a clean tea towel, keep in a warm place for about 15 minutes to allow the pastry to soften slightly.
