Quick & Easy Soup Recipes

When it comes to making soup Mushroom Soup Recipes are so quick and easy to follow, they are particularly satisfying on a cold winters day.

This Recipe Serves 4
75g Butter
4 Shallots, finely chopped
1 Clove of Garlic, Crushed
500g Field Mushrooms (selection of your choice.)Cleaned and Sliced
1 Litre of Chicken Stock
1 Tbsp Plain flour
Dash of Soy Sauce
A little Thick Cream
Salt and Pepper

Heat 50g of the butter in a heavy bottomed pan and saute the shallots until softened; add the garlic and cook for 1 minute more.
Add the mushrooms and stir coating well. Pour in the stock and bring to the boil.
Season and cover, simmering for 10-15 minutes, until the mushrooms are cooked.
Remove from the heat.

In a a separate pan, heat the remaining butter and stir in the flour to make a roux.
Cook for 2 minutes and remove from the stove.
In a liquidizer, blend the roux with soup ( this can be done in batches). Add the soy sauce and check the seasoning.
Garnish with a little thick cream and serve.
