1 Garlic Clove, Finely chopped
150ml Dry White Wine
150g Gruyere Cheese
1 Tsp Cornstarch (Cornflour)
1 Tbsp Kirsch (Optional)
Salt & Pepper
Bread or Chorizo Cubes to serve

Preparation: 3 Minutes Cooking Time: 7 Minutes
- Place the garlic and wine in a small pan and bring to the boil. Lower the heat and simmer for 3-4 minutes.
- Coarsely grate the cheese and stir it into the wine, continue to stir as the cheese melts.
- Blend the cornstarch to a smooth paste with the kirsch (or water if not using) and pour into the pan, stirring.
- Bring the pan to the boil, stirring continuously until the sauce is smooth and thickened.
- Add the salt & pepper to taste and serve immediately in heated bowls.
Variations: You could serve this in a fondue pan which has a spirit burner to keep it hot, and makes it more fun to eat with friends & family.
