This Vegetable Soup is great for getting the kids to eat more than the 5 a day recommended as it has 7 veggies in.
It is very easy to make as it is cooked in a slow cooker, which is great as a working Mum, so I love putting all the ingredients into my slow cooker before I leave for my day and come home just finish it off and serve.
This Vegetable Soup will serve 6 to 8 people.
3 (14 ounce) Cans Chicken Liquid Stock
1/4 Cup Butter, Melted
1 (16 ounce) Package Frozen Mixed Vegetables
1 Onion, Chopped
3 Ribs Celery, Sliced
1 Teaspoon, Ground Cumin
3 Zucchini, Coarsely Chopped
2 Cups Chopped, Fresh Broccoli
1 Cup Unthickened Cream
In a large slow cooker, combine the stock, butter, mixed vegetables, onion, celery, cumin, 1 teaspoon each Salt and Pepper and stir well.
Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours.
Stir in the zucchini and the broccoli, turning the slow cooker to high if it is not already and cook for a further 30 minutes to an hour or until the broccoli is tender.
Turn off the heat and add the cream and leave to stand for 10 minutes, before serving.
