Zucchini Bread

I often make Zucchini Bread as we grow them in our garden and we normally have so many, a friend of mine gave me this easy recipe.


3 eggs
1 cup. oil, canola or vegetable
2 cups. sugar
2 cups. grated zucchini
2 tsp. vanilla
1 14-oz. can crushed pineapple
3 cups. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1 tsp. baking powder
1/4 cup. nuts

Pre-heat oven to 350° F. Grease 2 bread loaf pans.

Beat eggs lightly. Add oil, sugar, zucchini and vanilla. Drain the pineapple, and add to mixture.

Add dry ingredients. Mix lightly, but well.

Divide into 2 loaves or use a large loaf pan. Bake for 1 hour, or until both loaves are done.

Makes 2 loaves.
