White Chocolate Brownies
These irresistible white chocolate brownies are very quick and easy to make, you will only need to serve them in small squares as they are very rich.
This Brownie recipe makes 18
6 Tbsp Sweet Butter, diced
400g Chopped White Chocolate
3 Eggs
1/2 Cup Superfine Sugar
2 Tsp Vanilla Extract
3/4 Cup Sultanas
Coarsely Grated Rind 1 Lemon, plus 1 Tbsp Juice
1 3/4 Cups of All Purpose Flour
Pre heat the oven to 190C/375F/Gas 5, Grease and line a shallow baking pan (28 x 20cm / 11 x 8in) with parchment paper.
Put the butter and 300g of the chocolate in a bowl and place over a pan of gently simmering water, stirring often until melted.
Remove from the heat and beat in the eggs and the sugar, then add the vanilla, sultanas, lemon rind and juice, flour and the remaining chocolate.
Tip the mixture into the pan and spread into the corners.
Bake for about 20 minutes until lightly risen and the surface is only just turning golden.
The Center should be slightly soft. Leave to cool in the pan. When cool cut the brownies into small squares and remove from the pan.
