Weetabix Cake

by Gaynor Taylor
(Liverpool )

When I am cooking with Kids, mine and my nieces and nephews, we always look at what we have in the cupboards at home.

The other day I found this recipe for Weetabix Cake, all the kids looked at me when I suggested it with looks of horror on their faces, but as they started to make it and then finally tasted the end result they loved it.

Kids love to make a mess when cooking and mixing this recipe together in a bowl really gives them some satisfaction of mixing something messy.

To make this cake you will need a 1 pound loaf tin and of course the ingredients below.

3 Weetabix

2oz Dark Brown Sugar

8oz Self Raising Flour

10oz Sultanas

1 Egg, Beaten

1/2 Pint Warm Tea (no milk)

In a bowl add the weetabix, sultanas, tea and sugar and mix together (this is the bit the kids love)

Then add the egg and flour and add some more tea if it is too dry.

Place in your lightly greased loaf pan and cook for 45minutes to 1 hour in a pre-heated Oven at Gas Mark 5 - 180C.

This Cake is best served spread with butter and is great to send for a snack in your childs lunchbox.

Flour
by: Gaynor

Hi, What am I like...:)

The recipe requires 8oz Self Raising Flour, you could use 8oz Plain Flour but you will need to add 1 tsp of baking powder and 1/2 tsp Bicarbonate of Soda.

The cake is very easy to make and the dried fruit give the extra sweetness from the lack of sugar.

Have fun baking this Weetabix Cake..:)

How much flour?
by: Anonymous

This recipe looks really good as there is only a small amount of sugar in it compared to other recipes. I would love to make it but there isn't an amount for the flour. Gaynor, can you let us know how much flour to use?
