Spiced Lamb Tagine



Spiced Lamb Tagine this dish is cooked in your Crock Pot it is slow cooked to release the flavors of the meat and spices, you don't need a special Tagine (pot) to cook this dish your slow cooker will do.


Serve 6-8

Preparation Time : 35 Minutes

Cooking Time : 8 1/2 to 10 1/2 Hours

Slow Cooker Size ; Large or Extra Large



1 Tablespoon Olive Oil

500g Diced Lamb

1 Large Onion, Chopped

2-3 Garlic Cloves, Chopped

3.5 cm Piece of fresh root ginger, peeled and Finely Chopped

1 Teaspoon Turmeric

1 Teaspoon Ground Cinnamon

1/2 Teaspoon Allspice

2 Tablespoons Plain Flour

400g Can Chopped Tomatoes

750ml Lamb or Chicken Stock

1 Tablespoon Tomato Paste

300g Baby Potatoes, scrubbed and halved

300g Butternut Squash, De-Seeded Peeled and Diced

2 Carrots Diced

50g Raisins

300g Frozen Broad Beans

150g Frozen Peas

Small Bunch of Mint, Leaves torn

Salt & Pepper

Couscous to serve



Pre Heat the slow cooker while you prepare your ingredients.

Heat the oil in a large frying pan Add the lamb and onion and fry for 5 minutes until the meat is browned.

Stir in the garlic, ginger, spices and flour, then add the canned tomatoes, stock and tomato paste.

Mix in the potatoes, butternut squash, carrots and raisins, then season with the salt and pepper.

Transfer everything into your crock pot, cover with the lids and cook on 'low' for 8 to 10 hours.

Stir the Tagine, then sprinkle the frozen vegetables over the top.

Replace the lid and cook for another 20 to 30 minutes until the vegetables are hot.

Spoon on to individual plates, sprinkle with the torn mint leaves and serve with the couscous.
