Spiced Apple Muffin Recipe

by Dave
(New York)

Spiced Apple Muffins

The kids will love these muffins they are so easy to make and are very moist and I would leave out the walnuts as they can be quite strong tasting for the little ones, leave those for the adults.

These Muffins are great for Winter time especially Christmas time, with the spices and you could also add a little mixed fruit if you wished.

This Recipe makes 12 Spiced Apple Muffins

2 Cups all purpose flour

1 Tsp Salt

1 Tbsp Baking Powder

1/2 Tsp Cinnamon

1/2 Tsp Nutmeg

2/3 Cup Brown Sugar

2 Eggs Beaten

2/3 Cup Milk

1/4 Cup Melted Butter

1 Cup Peeled and Grated Apple

1/4 Cup of Chopped Walnuts

1. Preheat the oven 180C (350F) Gas Mark 4

2. Lightly grease your Muffin pan or place in the paper liners.

3. In a large bowl sift in the flour, salt, baking powder, cinnamon and nutmeg.

4. Mix in the sugar with the flour mixture.

5. In a separate bowl mix the eggs with the melted butter, milk and apple.

6. Make a well in the center of the flour and add the wet mixture and the walnuts and fold together ( don't over mix the flour can still be visable).

7. Spoon the muffin batter into the muffin pan and bake in the oven for 20-25 minutes until firm to the touch and golden brown.

8. Remove from the oven and allow to cool in the pan for 5 minutes before removing and cooling completely on a wire rack.
