Salmon Pasta Recipe
This Salmon Pasta Recipe is really easy to follow and kids love it.
It is a great way to get your kids to eat fish and vegetables, it is a very healthy dish.
Makes 4 Portions
Preparation Time:- 8 Minutes
Cooking Time:- 15 Minutes
50g Salmon Fillet
150ml Vegetable Stock
40g Linguine
a knob of butter
1/2 Small Onion, finely chopped
2 tsp all purpose flour
100ml milk
50g Broccoli, roughly chopped
3 Tbsp Low Fat Creme Fraiche
3 Tbsp Grated Parmesan Cheese
1 Tsp Lemon Juice
1/2 Tsp Fresh Chives Chopped
Poach the salmon in a little of the stock over a low heat for 3-4 minutes.
Cook the pasta in boiling salted water, according the the packet instructions.
Drain the linguine in a colander.
Melt the butter in a saucepan, add the onion and saute for 3-5 minutes until just soft.
Add the flour and mix together stir in the stock and milk.
Bring to the boil add the broccoli and simmer, covered, for 5 minutes until the broccoli is soft.
Stir in the creme fraiche, cheese, lemon juice, chives and the cooked flaked salmon.
Simmer for a further 2 minutes and then add the drained pasta to the sauce and serve.
