Rainbow Fairy Cakes

When my niece comes to stay she always asks if we can make the Rainbow Fairy Cakes Recipe. You can choose which ever colors you wish to make your rainbow cupcakes.

Rainbow Fairy Cakes Recipe

100g/4oz Softened Butter

100g/4oz Caster Sugar

2 Standard Eggs

100g/4oz Self-Raising Flour,Sifted

1 tsp Cocoa Powder(If using to make the brown color)

a few drops of your favorite food colorings we used Green & Red

1.Prepare 18 paper cases standing in 18 ungreased bun tins.

2.Turn on the oven 180c/350f of Gas 4 (Ask an adult to do this for you)

3.Cream the butter and sugar together until very pale in color, light in texture and fluffy.

4.Beat in whole eggs one at a time, adding a little flour with each this will help to stop the eggs and butter splitting.

5.Gently fold in the remainder of the flour with a metal spoon.

6.Separate the mixture into 4 separate bowls then add a few drops of the food coloring to 3 of them remembering to leave one plain as this will give you the yellow color.

Now to assemble your Rainbow Fairy Cakes

7.With a spoon,a different one for each bowl place a little of the cake mixture into each paper case until you have divided the different colors into each equally.

8. Bake in the center of the oven for 20/25 minutes until well risen and firm. (Remember to wear oven gloves and get an adult to help you)

9.Leave in the tins for 2 to 3 minutes. Turn out on to a wire cooling rack and leave to cool while you make the butter icing.

10. Take a knife and cut out a small hole in the top of the cake to make the wings. Make the wings by cutting the piece of cake you have taken out in half.

11. Fill the hole with the butter icing and place your wings on top.

Butter Icing

75g/3oz Butter Softened

175g/6oz Icing Sugar

Vanilla Essence

15-30ml/1-2tbsp Milk or Warm Water

1.Put the butter into a bowl and cream until soft.

2.Gradually sift and beat in the icing sugar.

3.Add a few drops of the vanilla essence along with the milk or water to reach the required consistency.
