Pumpkin Muffins

This Pumpkin Muffin Recipe is a great family favorite of ours the kids love to help me bake them.
2 Cups of All Purpose Flour
2 Tsp Baking Powder
1/2 Tsp Baking Soda
1 Scant Tsp Ground Cinnamon
1/2 Tsp Ground Ginger
1/2 Tsp Ground Nutmeg
1/2 Tsp Salt
1 Can Pumpkin Puree
1/3 Cup Melted Butter
1/2 Cup evapourated Milk
1/2 Cup Brown Sugar, Packed
1/4 Cup Granulated Sugar
2 Large Eggs Beaten
1 Tsp Vanilla Essence
1/2 - 3/4 Cup of Rasins
Makes 12-16 Muffins
Preheat your oven to 180C (375F) Gas Mark 5 and pre line your muffin pan either with paper cases of a little oil.
1. In a large bowl add the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, salt.
2. In a separate bowl beat the eggs, milk,pumpkin puree, sugar and vanilla essence until well mixed.
3. Add the pumpkin mixture to the flour and stir together until moistened.
4. Add the mixture to the muffin pan about 3/4 full and bake in the center of the oven for 20-25 minutes.
If you wish you can sprinkle a little cinnamon sugar over the muffins before cooking for an extra crunchy top.
