Pear and Sultana Bran Muffins

Theses tasty muffins can be eaten on their own or with a little reduced sugar jam or Honey.

And are best when they are still warm straight out of the oven, so you may have to get up a little earlier if you want them for breakfast.



Make 12 Muffins

75g Plain Wholemeal Flour Sifted

50g Plain White Flour Sifted

50g Bran

1 Tbsp Baking Powder Sifted

Pinch of salt

50g Unsalted Butter Melted

50g Soft Light Brown Sugar

1 Egg

200ml Skimmed Milk

50g Ready to eat dried chopped Pears

50g Sultanas



1. Preheat your Oven 200C (400F) Gas Mark 6

2. Lightly grease your line with paper cases your 12 muffin pan.

3. Mix together the flours and the bran, baking powder and salt in a bowl.

4. Mix together in another bowl the egg, milk sugar and melted butter.

5. Add the pear and sultanas to the flour mixture and fold in and the add the wet ingredients.

6. Gently fold in the wet ingredients only enough to combine as if you over mix the muffins will turn out heavy.

7. Spoon the mixture into the muffin pans and bake for 15-20 minutes until well risen and golden brown.

8. Turn out onto a wire rack to cool.
