Pasta Dough Recipe
The Easiest Homemade Pasta Recipe

This Pasta Dough Recipe is for 1 person so you will need to increase the ingredients per person.

There is nothing better than making your own homemade pasta and hopefully this homemade pasta recipe will be one for use, for the rest or your days cooking pasta.

Basic Pasta Dough Recipe

100g Plain white flour,00,or half plain white flour and half semolina

1 Large egg

And extra flour for rolling out.

To make the pasta, pile all of the four onto a work surface and make a hollow in the center.

Break the eggs into a bowl and whisk together, then pour into the hollow.

Using your finger tips, begin to roughly knead the flour, then use your whole hands to knead everything together.

Try not to be too heavy handed but you don't need to be too soft like making pastry, some where in between.

Knead the flour and eggs until you have a smooth, pliable ball of pasta dough.

Rest under a clean cloth for about 20 minutes, so that the gluten relaxes and the dough is more manageable.

Now comes the hard work when making the pasta dough recipe:-

On a floured surface, roll the dough out as thinly as possible with a strong long rolling pin.

Continue to roll over and over again until the pasta dough is really elastic and shiny.

You could also KitchenAid Pasta Maker instead of a traditional rolling pin if you wish and most people do as it can be a lot easier for kids to use. As before make the dough in the same way, but when you have rested it you will need to cover with a damp cloth to stop the pasta dough from drying out.

To roll the pasta through your pasta machine, break off a piece of dough about the size of a small fist flatten with your hands and push through the widest setting on your pasta machine turning the handle.

Fold in half and repeat 3 to 4 times, or until the pasta snaps a sit moves between the rollers, this means that it has become taut and created an air pocket.

Once this happens move the machine down to the next setting.

Repeat twice continue changing the setting after 2 complete turns of the pasta machine, on each number down to the last setting.

Depending on how fine you want your pasta.

Lay the pasta sheets on a floured surface, be careful how you handle the pasta as it will be very fragile.

Repeat this process until all of your dough has been used and rolled as you require. Make sure that all the pasta is the same thickness or when it comes to cooking some piece may take longer than other.

Once cut, use the pasta immediately or let it dry out further. Dried-out fresh egg pasta can be kept in a sealed jar in a dry place for up to 1 month.

Alternatively, open-freeze on trays, then bag up and label with the date; it will keep up to 3 months once frozen.
