Oven Fried Chicken Recipe



Oven Fried Chicken Recipe? Yes it is but the chicken in this dish is not fried but baked until crisp in the oven.

It is a great midweek meal served with a baked potato and salad, many kids prefer it with baked beans.

You will need to read the recipe through before you start as you need to make sure you have all your ingredients to hand as you will get very sticky when you start to coat the portions in the breadcrumbs.





This Oven Fried Chicken Recipe Serves 4

4 Large Chicken Portions (on the bone)

1/2 Cup Flour (all purpose)

1/2 Tsp Salt

1/4 Tsp Pepper

1 Egg

2 Tbsp Water

2 Tbsp Chopped Mixed Fresh Herbs, Parsley, Basil and thyme

1 Cup Dry Breadcrumbs

1/3 Cup Freshly Grated Parmesan Cheese

Lemon Wedges For Serving

1. Preheat the oven to 200C/400F/Gas 6.

2. Rinse the chicken in cold water and pat dry with kitchen paper.

3. Combine the flour, salt and pepper on a plate and stir with a fork. Coat the chicken pieces on all sides with the flour and shake off the excess.

4. Sprinkle a little water on to the meat and coat again lightly in the seasoned flour.

5. Beat the egg with the water in a shallow dish. Stir in the herbs.

6. Dip the portions into the egg mix turning them over to coat thoroughly.

7. Combine the breadcrumbs and the grated parmesan cheese on a plate, roll the meat in the crumbs and pat with your fingers to help it stick.

8. Place the coated portions in a greased shallow pan, large enough to hold them in one layer. Bake until thoroughly cooked and golden brown for 20-30 minutes.

To check that this dish is cooked, prick with a fork; the juices should run out clear, not pink.

Serve straight away with lemon wedges and side dishes of your choice.
