Oven Baked Salmon
This oven Baked Salmon recipe is great for your family dinner is it a budget- friendly dish, it is a very healthy comforting meal, the salmon is layered between potatoes, spinach, red onions and creme fraiche.
You will be able to serve this dish to your family within an hour.
1kg Potatoes, cut into 3mm slices
1 Tbsp Olive Oil
1 Large Red Onion, Sliced
1 Tbsp Plain Flour (Al purpose)
Few Handfuls of Baby Leaf Spinach
Knob of Butter, for greasing
3 Skinless Salmon Fillets, Sliced
200ml Creme Fraiche
50g Grated Cheddar Cheese
Preheat the oven to 180C/Fan 160/350F/Gas Mark 4.
Bring a pan of salted water to the boil and add the sliced potatoes to the water and simmer for 2-3 minutes.
Drain and set aside.
Heat the olive oil in a frying pan and gently fry the onion for 5 minutes, then stir in the flour and season well with salt and pepper.
In another saucepan wilt the spinach over a medium heat, then squeeze out any excess water.
Butter your 1.2 litre Oven proof dish and layer up the potatoes, onion with the salmon and spinach.Making sure you finish with a layer of potatoes.
Pour over the creme fraiche (add a little milk if too thick) and sprinkle over the cheese and bake for 20-30 minutes until bubbling and golden in color.
