Madeira Cake Recipe
This Madeira Cake Recipe is a lovely Traditional cake to bake with kids, my mother used to bake with my sister and I when we were children.It is a very simple cake to bake and the lemon flavor is not over powering and the sponge is very light, great with an afternoon cuppa.
To make this cake you will need a 7 inch round cake pan that needs to be lined with greaseproof (waxed) paper.
Ingredients 6oz Butter 6oz Caster Sugar 3 Eggs, Beaten 1/2 Tsp Lemon Essence or Grated Rind of 1/2 Lemon 8oz Self Raising Flour 4 Tbsps Milk, Approx Thin slices of Citron Peel to Decorate
Pre-heat the oven to a Moderate Heat 350F/Gas Mark 4. Grease your cake pan and line with the waxed paper, cream the butter and sugar until pale and fluffy. Beat in the eggs with the flavoring adding a little of the flour if it begins to curdle. Fold in the sifted flour, with enough milk to give a dropping consistency. Put into the cake pan and bake in the center of the oven for half and hour. Place the peel across the cake and continue to bake for a further 1 hour. (Cover the cake with a piece of greaseproof paper if it is over browning.)
If you don't fancy using the candied peel on the cake as decoration then you really don't need to, this all butter cake can be decorated however you wish. Madeira cake is a very versatile cake and can be used as a base for a Birthday or even a wedding cake.
