Lemon Drizzle Cake
150g Softened Butter150g Caster Sugar 2 Eggs Grated Zest and Juice of 1 Lemon 150g Self Raising Flour 4 Tbsp Milk 2 Tbsp Icing Sugar Preheat the oven 180C (350F) Gas Mark 4Place the butter into a mixing bowl and beat the butter until soft using a wooden spoon. Add the caster sugar and beat again, break the eggs into a mug and whisk well with a fork. Gradually add the eggs to the butter and sugar mixture, if you add the eggs to fast it will curdle don’t worry too much about this you can add a little of the flour to stop this happening. Add the grated Lemon Zest and sift in the flour, add enough milk to make the mixture of dropping consistency.Spoon the mixture into a non-stick (900g) loaf tin and spread it flat with a spatula. Bake for 40 minutes. Wearing oven glove remove the cake from the oven and test the top of the cake, if it springy it is cooked, if not bake for another 5 minutes. Mix the icing sugar with the lemon juice in a small bowl or cup.Prick the top of the cake with a fork and pour over the juice whilst the cake is still warm. Leave the cake to cool in the tin for 15 minutes then carefully turn it out and leave to cool completely on a wire rack.
Plum & Almond Tart
375g Ready-Rolled Puff Pastry115g Marzipan 6-8 Plums, stoned pitted and sliced Serves 4 Preheat the oven to 190C/375F/Gas Mark 5 Unroll the pastry on to a large baking sheet, using a sharp knife score a border 2in from the edge of the pastry all round, without cutting all the way through. Roll out the marzipan into a rectangle, to fit just with the border, then lay it on top of the pastry, pressing down lightly with the tips of your fingers. Arrange the sliced plum’s on top of the marzipan and bake for 20 minutes, or until the pastry is risen and golden brown. Carefully transfer the tart to a wire rack to cool slightly, then cut into squares or wedges and serve.
Scones
A Traditional English Teatime Treat Served warm with butter or your favorite jam and clotted cream.
250g Self Raising Flour
1/2 Teaspoon Salt
50g Butter
25g Caster Sugar
150ml Milk
Preheat the oven to Gas Mark7 220C/425F
Sift the flour with the salt into a mixing bowl, cut the butter into small chunks and add it to the flour and salt.
Rub in the butter using your fingertips until the mixture looks like coarse breadcrumbs.
Stir in the sugar, make a big well in the middle of the flour and pour in the milk. Mix with a palette knife to make a spongy dough.
Tip the dough on to a floured worktop, it needs to handled as little as possible, so knead until just smooth.
Roll out the dough until 2.5cm thick and stamp out scones using a fluted cutter. Re roll and use any of the trimmings.
Carefully place the scones on a lightly floured baking sheet and sprinkle each one with a little extra flour.
Put the tray in the oven and bake the scones for 7 to 8 minutes until well risen and golden brown.
Remove from the oven using oven gloves, lift the scones onto a wire rack and leave to cool.
