Hamburger Soup Recipe

There are many variations to the Hamburger Soup Recipe, it is a very hearty dish and almost a meal in its self.





My children love this up lifting warming soup in the winter served with slices of homemade bread.


This Recipe serves 8

1lb ground beef

4 Cups of beef stock

1 Can chopped tomatoes

3 Carrots, sliced

2 Medium Potatoes, peeled and diced

1 White Onion, chopped

2 Celery sticks, finely sliced

1 Tsp salt

1 Tsp pepper

1/4 Tsp dried oregano

200g Sliced Green Beans

In a large saucepan, fry off the ground beef until just colored. Remove the meat from the pan using a slotted spoon so that the fat remains in the pan.

Add the onions, carrot and celery to the saucepan and fry off for a few minutes until soft and tender.

Don't allow the vegetables to brown you just need then to be soft to the touch with a knife.

Pour the stock and the potatoes into the pan and season with the salt and pepper, bring the pan to the boil.

Place the meat back into the saucepan cover and turn down to a simmer for about 15 minutes or until the potatoes are soft.

Add the green beans and simmer for a further 10-15 minutes, or until the beans are cooked to your liking.





You can either serve the Hamburger soup straight away with some warm homemade bread, or you could refrigerate for 3 days, the soup is also ideal for freezing.

I often double the recipe and freeze half in individual freezer bag portions, great for when were in a rush but want something warming and nutritious.
