Granola Smoothie

My Kids love this Granola Smoothie, funny really as I can't get them to eat Granola as they don't like the texture.

We first tried this recipe last Summer, when the kids wanted something quick and filling for breakfast so they could go out and play with their friends during the school holidays.

This divinely smooth drink is full of goodness and no lumpy bits.

Adding pureed apricots and stem ginger gives it an extra flavor.



This Easy Kids Breakfast Recipe serves two.



1/4 Cup Ready to eat Apricots

1 Piece Preserved Stem Ginger, plus 2 Tbsp syrup from the ginger jar

1/2 Cup Natural Granola

Scant 1 Cup Low- Fat Milk



Using a sharp knife cho the apricots into slices or chunks and chop the preserved ginger.

Put the apricots and ginger into a blender or food processor and add the syrup form the ginger jar with the granola and milk.

Process until smooth, adding more milk if needed to make a creamy drink.

This is a very good filling smoothie my 4 yr old loves it, tried it with mixed berries instead of the ginger and apricots that works too..
