Fried Pasta Spaghetti Frittata
Spaghetti Frittata, pan fried pasta. You could use any leftover pasta for this recipe I find that the kids prefer spaghetti as it looks very pretty.
Serves 4-6
4 servings of leftover pasta
4 Servings of Tomato sauce
6 Eggs Beaten
2 Tbsp Grated Parmesan Cheese
4 Tbsp Olive Oil
Salt & Pepper
In a bowl mix the cold cooked pasta with the eggs.
Add the parmesan Cheese and seasoning mix well.
Heat the oil in a wide and shallow frying pan, when it is very hot add the egg mixture.
Shake the pan to flatten and even the mixture out.
Pull the liquid egg into the center of the pan as you work.
Cook until the underside is browned and firm, about 5-10 minutes.
Turn over the frittata, the best way to do this is place a large plate over the pan and lift upside down.
Place the pan back on the heat and carefully slide the frittata back in the pan (uncooked side down).
Cook for a further 5-8 minutes until golden brown.
I add in extra cheddar cheese and cooked vegetables, this easy pasta recipe is also great when using leftover bolognese.
