Easy Sponge Mix

I spent a lovely hour or so making a very easy sponge mix with my daughter the other weekend..

6oz self raising flour, 6 oz butter or marg cut into 2cm cubes (cold) 6oz caster sugar and 3 eggs.

Threw it all in the blender and whizzed it up !!

You could add anything to it like cocoa , vanilla essence or grated orange or lemon rind, or anything else you fancy.

Put it in the oven on about gas mark 7 for about 25 mins or until golden on top and it springs back up when you test it with you finger on top.


My daughter really enjoys cooking and I did on this occasion. Getting Kids Baking is a great way to spend time together

We followed your easy sponge mix recipe on Sunday, my son and I really enjoyed ourselves.

Thank you for sharing the recipe it is a really easy recipe to follow, we added Cocoa Powder, as we love chocolate.

Everyone enjoyed our cake when it was cooked and my son was so proud of his achievements.
