Easy Dinner Recipes
Meals for all the Family to Enjoy

As a busy working Mom myself I am always looking for Easy Dinner Recipes I can cook for my family

When your working all day, doing the school run and attending outer school activities, you really need quick and easy recipes and of course Healthy Recipes for Kids.



Coming up with new and exciting meals that all the family will eat can bring many mothers to despair. I find the best way to deal with this is to Meal Plan, this works for me, before I do my weekly shop I fill in a weekly meal planner and then write the ingredients I need on to my shopping list.

This way I don't always cook the same meals every week, on the same day and I don't end up cooking Chicken, Pork, Beef or Fish four days out of the seven.

I also plan what Breakfast, Lunch and snacks we will be having this really does save me some time and it helps when we do our family budgeting.

Because we use this method I can also look for new recipes to try as the family are used to having a variety of meals which are healthy and nutritious.




I also love to cook One Pot Dishes as these make really simple suppers, all you generally have to do is prepare the ingredients, place them in your cooking pot and leave to do the rest, these sometimes can take a few hours to cook like

Crock Pot Meals, but they are really worth the wait and your not tied to the kitchen for a long time, you can normally cook these through out the day.

I have even cooked in my Slow Cooker over night for the next day. Many of the recipes can also be frozen, there is nothing better than getting a ready made meal out of the freezer that you have loving cooked yourself.

When Cooking our dinners I often cook a few more portions than are needed so that I can freeze them, for the following week or for the days when I know I just don't feel like cooking.

You don't have to be a qualified Chef or Cook to prepare cook or serve your family or friends some wonderful meals, it can be quite scary when you first have a go a cooking something new.

We often try a new recipe and find that we don't like it, we maybe adjust the recipe a little next time, or we don't cook it again.

Many of the Easy Dinner Recipes can be prepared and cooked in less than an hour some as short as 30 Minutes.




Turkey Enchiladas (Easy Dinner Recipes)

Turkey Filling

500g Turkey Breast

2 Tbsp Olive Oil

1 Large Onion, thinly sliced

3 Garlic Cloves, crushed

1 Tsp Ground Cumin

2 Tbsp Stock or Water

Salt & Pepper

1 Tbsp chopped Coriander (Cilantro)


Tomato Sauce

2 Tbsp Oil

1 Onion, chopped very finely

3 Garlic Cloves

1 Red Chilli, de-seeded and chopped finely

425g can of Tinned Chopped Tomatoes

250g Can of Chopped Tomatoes with Herbs3 Tbsp Tomato paste

2 Tbsp Lime Juice

2 Tsp Caster (superfine) Sugar

Salt & Pepper

6 Tortillas Wheat or Corn

175g Feta or White Cheshire Cheese, coarsely grated

Serves 4

Chop the turkey breast finely, heat the oil in a pan and fry the onions and garlic gently until soft. Add the turkey and fry for about 5 minutes, or until well sealed and almost cooked, stirring frequently.

Add the cumin, stock or water and seasoning and continue to cook for 2-3 minutes until tender: then stir in the coriander (cilantro) and remove from the heat.

To make the tomato sauce, heat the oil in a pan and fry the onion, garlic and chilli gently until softened. Add both cans of tomatoes and tomato paste, lime juice, sugar and seasoning, bring to the boil and simmer gently for 10 minutes.

Place 1 tortilla onto a greased ovenproof dish, cover with a fifth of the turkey mixture and 2 Tbsp of tomato sauce and sprinkle with cheese.

Continue to layer this way, finishing with a tortilla, the remaining sauce and cheese.

Place uncovered in a preheated oven at 190C/375F/Gas Mark 5 for about 25 minutes or until lightly browned.

Serve cut into wedges and sprinkle with coriander (cilantro).




Chicken Goujons (Easy Dinner Recipes)

4 Boned & Skinned Chicken Breasts

175g Breadcrumbs

1 Tsp Ground Coriander

2 Tsp Ground Paprika

½ Tsp Ground Cumin

3 Tbsp Plain Flour

2 Eggs, Beaten

Oil for deep frying

Salt & Pepper

Lemon Slices to Garnish

Sprigs of Fresh Coriander, to garnish

For the Dip

300ml Greek Yoghurt

2 Tbsp Lemon Juice

4 Tbsp Chopped Fresh Coriander

4 Tbsp Chopped Fresh Parsley


Serves 8


Divide the chicken breasts into two natural fillets, place them between two sheets of clear film and using a rolling pin, flatten each one to a thickness of 1cm.

Cut the chicken into diagonal 2.5cm strips.

Mix the breadcrumbs with the spices and seasoning into a bowl.

In a second bowl toss the chicken pieces in the flour.

Place your beaten eggs onto a plate and dip the goujons into egg and then coat in the breadcrumbs.

Place all of the ingredients for the dip into a bowl and mix well, cover and chill until required.

Heat the oil in a heavy-based pan, it will be ready when a piece of bread tossed into the oil sizzles on the surface.

Fry the Chicken Goujons in batches until golden and crisp for about 8 to 10 minutes.

Drain on kitchen paper and keep warm in the oven until all the chicken has been fried.

Garnish with lemon slices and sprigs of fresh coriander and the yogurt dip.




Potato and Onion Tortilla (Easy Dinner Recipes)

800g medium Potatoes

100ml Extra Virgin Olive Oil 2 Onions Thinly Sliced 6 Eggs

Salt & Pepper


Serves 4-6


Preparation: 10 Minutes

Cooking: 40 Minutes Plus 10 Minutes Standing Time

Thinly slice the potatoes. Heat 75ml / 5 Tbsp of the oil in a frying pan and cook the potatoes, turning them frequently, for 10 Minutes.

Add the onions and seasoning to the potatoes and cook gently for a further 10 minutes, until all the vegetables are tender.

Beat the eggs in a large bowl with a little seasoning. Tip the potatoes and onions into the eggs and mix gently. Leave to stand for 10 minutes.

Wipe out the pan with kitchen paper and heat the remaining oil. Pour the egg mixture into the pan and spread it out in an even layer.

Cover and cook over a very gently heat for 20 minutes, until the eggs are just set. Cut into wedges and serve.


This Tortilla can be served as an appetizer with a refreshing leafy salad.

You can also add chopped red/yellow Bell Peppers, cooked peas, corn, or grated cheese to the tortilla for a different flavor.




Corned Beef & Egg Hash (Easy Dinner Recipes)


Serves 4


2 Tbsp Vegetable Oil

2 Tbsp Butter

1 Onion (Finely Chopped)

1 Green Bell Pepper (Seeded and Diced)

2 Large Firm Boiled Potatoes (Diced)

12oz Can Corned Beef (Cubed)

¼ Tsp Grated Nutmeg

¼ Tsp Paprika

4 Eggs

Salt

Ground Black Pepper


Heat the oil and butter in a large frying pan on a medium heat.

Add the onion and fry for 3-4 minutes until softened (do not brown).

In a bowl mix together the green pepper, potatoes, corned beef, nutmeg and paprika.

Add to the frying pan and toss gently to mix in the onion season well with the salt & pepper.

Press down lightly and fry without stirring on a medium heat for about 3-4 minutes until golden brown crust has formed on the underside.

Sit the mixture thoroughly to distribute the crust, repeat the frying twice, until the mixture is well browned.

Make four wells in the hash and carefully crack an egg into each.

Cover the pan with a lid and cook gently for 4-5 minutes until the egg whites have set.

Serve the corned beef hash straight away with crusty bread and Tomato Sauce.

Variation:- You could add cherry tomatoes to the corned beef hash and a bit of chilli to spice it up a little.

Poach the eggs separate and add the Dish when you serve it.
