Easy Chocolate Cake Recipe

When we have a kids party we always make these Party Fancy Cakes and follow this easy chocolate cake recipe.
3/4 Cup Unsweetened Cocoa
2 Tablespoons Hot Water
1 1/2 Cups Butter
1 1/2 Cups Sugar
6 Eggs
3 Cups Sifted Self-Raising Flour
Glace Icings 3 1/2 Cups Sifted Confectioners Sugar
1/2 Cup Water
2 Teaspoons Unsweetened Cocoa (mixed with 1 Teaspoon hot water)
1 Tablespoon Coffee Extract
Blend the cocoa with the hot water and set aside. Cream the butter and the sugar together in a bowl until light and fluffy.
Beat in the eggs, one at a time, adding a tablespoon of the flour with each one.
Fold in the remaining flour with the cocoa mixture.
Spoon into a greased and lined 23 x 35cm / 9 x 14 inch baking tin or oven proof dish.
Bake in a moderate oven (180C/350F/Gas Mark 4) for 40 minutes or until firm to the touch.
Turn out onto a wire rack to cool.
Cut into 5 x 5.5 cm / 2 x 2 1/4 inch squares and replace on the wire rack.
To make the glace icing, mix the confectioners sugar with the water, and beat to a smooth paste.
Halve the mixture and flavor one portion with the blended cocoa and the other with the coffee extract.
Coat each cake completely with one of the glace icings. Leave until set.
We decorate the cakes with piped butter cream and melted chocolate.And finish with chocolate squares and triangles, caraque.
