Double Chocolate Muffin Recipe



Double Chocolate Muffin Recipe

Everybody loves Chocolate Muffins, these muffins are made with Cocoa Powder and Chocolate chips for that maximum chocolate taste.


250g Plain flour (all purpose)

40g cocoa powder

2 tsp baking powder

100g caster sugar

80g chocolate chips

2 large eggs

230ml milk

125 ml sunflower oil

1 tsp vanilla essence

20g chocolate chips for sprinkling.

This recipe will make 12 small or 9 large Muffins



1. Preheat your oven 200C (400F) Gas Mark 6.

2. Line your muffin pan (or lightly grease if your not using paper cases)

3. Set a large sieve over a large bowl. Tip the flour, cocoa, baking powder and sugar into the sieve and sift into the bowl. Add the chocolate chips.

4. Break the eggs into a second bowl and add the milk, oil and vanilla then mix well with a fork.

Add the flour mixture to the wet mixture and gently mix with a wooden spoon. (You don't need to over mix).

6. Spoon the mixture into your Muffin pan each one should be half full (add a little more if your making 9 larger ones).

7. Carefully dot with your extra chocolate chips.

Place your muffin pan into the oven cook them for about 20 minutes until well risen and just firm, the chocolate chips will become very hot so be careful.

9. Remove the muffins from the oven and allow to cool for 5 minutes in the pan before placing on a wire rack to cool completely.
