Coconut Cake Recipe
A Great Lemon Coconut Cake Kids Love To Bake



This Coconut Cake Recipe is taken from an old recipe book my Mum used to use with my sister and I when we were kids..in the 1970's.

And after recently visiting I found the recipe book and it brought back some great memories, and some recipes I had forgotten about and I am now cooking with my kids.

We always Loved to bake on a Sunday afternoon and this Lemon Coconut Cake was always a first choice.

Everyone will love this cake the best part is licking all the coconut and lemon butter cream off your fingers.



To Make this Coconut Cake you will need:-

4oz Butter or Margarine

4oz Sugar

2 Eggs, Beaten

4oz Self-Raising Flour

Lemon Curd

6oz Lemon-Flavored Butter Cream

Desiccated Coconut

Maraschino Cherries For Decoration


Preheat the oven to 350F/Gas Mark 4.

Grease two 7 inch Sandwich Tins.

Cream the fat and sugar togther until pale and fluffy then beat in the eggs a little at a time.

Sift the flour then fold in and put the mixture into the tins bake in the center of the oven for 25-30 minutes, until golden-brown and firm to the touch and the sponge is starting to come away from the edges.

Cool on a wire rack and sandwich together with the lemon curd.

Cover the top and sides with the lemon butter cream, then dredge with coconut until you can no longer see the butter cream,and decorate with the cherries placed in the center of the cake.

If you don't like Lemon you could use strawberry jam to sandwich the sponges together and Vanilla Butter Cream over the cake before the coconut is added.
