Christmas Cherry Fudge Recipe

When it comes to Christmas treats this is one of my favorites,my friend gave me this Christmas Cherry Fudge Recipe.

I have adapted it myself to my families taste, we love white chocolate but you could use milk chocolate if you prefer.

The recipe make 500g of Fudge

Takes 20 Minutes plus 1 hour chilling time.

350g Granulated Sugar

25g Unsalted Butter

175ml Can Evaporated Milk

100g Dried Sweetened Cherries

300g White Chocolate, Chopped

Cut a piece of parchment paper large enough to line a shallow 25 x 20 cm baking pan or a 1kg loaf pan.

Put the sugar, butter, and evaporated milk in a large heavy-based pan.

Heat gently until the sugar has dissolved completely.

Bring to the boil, stirring continuously with a wooden spoon, the reduce and simmer for 5 minutes.

Immediately remove from the heat then add the cherries and chocolate.

Allow the chocolate to melt, then quickly stir the mixture and pour straight into the pan.

You will have to be quick as the fudge will thicken immediately.

Spread around the tin and chill for 1 hour or until firm.

Cut into squares.
