Chocolate Chip Muffin Recipes
Kids love Chocolate Chip Muffin Recipes, and this recipe is ideal as the mini muffins are fabulous bite-sized treats for young children and perfect for kids parties.
Makes 12 Chocolate Chip Muffins
100g Soft Butter
225g Caster Sugar
2 Large Eggs
150ml Natural Yogurt
5 Tbsp Milk
275g Plain Flour
1 Tsp Bicarbonate of Soda
175g Dark Chocolate Chips
Line 12 Muffin tins with paper cases.
Place the butter and sugar in a mixing bowl and beat with a wooden spoon until light and fluffy.
Beat the eggs, yogurt and milk in with the butter and sugar.
Sieve the flour and bicarbonate of soda together and add to the mixture.
Stir until just blended.
Stir in the chocolate chips, then spoon the mixture into the paper cases.
Bake in the preheated oven (190C / 375F / Gas Mark 5) for 25 minutes or until a skewer inserted into the center comes out clean.
Leave to cool in the tin for 5 minutes, then turn out on to a wire rack to cool completely.
If you would prefer to make the chocolate chip muffins larger this will make 6 muffins or 24 mini muffins, also you could use white chocolate chips in the recipe.
