Chickpea and Feta Salad

My daughter and I love to cook together she has been helping me in the kichen since she was 3 she is now 6, one of her favorite lunches to make is this Chickpea and Feta Salad it is very easy to make very quick and healthy, she often takes it to school for her lunch.
To make four servings you will need:-
Ingredients:
2 minced garlic cloves
1/3 cup (75 ml) olive oil
1 large lemon, finely grated zest & juice
pepper
2 - 19 oz (540 ml) can chickpeas, drained & rinsed
1/4 cup (60 ml) packed fresh mint, chopped
3 tablespoons (45 ml) red onion, finely chopped
2 tablespoons (30 ml) fresh parsley, chopped
3/4 cup (175 ml) feta cheese, crumbled
Directions:
1. In a small bowl, whisk together the garlic, oil, lemon zest, lemon juice & pepper to taste.
2. In a large bowl, gently combine the chickpeas, mint, red onion & parsley.
3. Pour the dressing over the chickpea mixture.
Sprinkle the feta over top & toss to combine.
4. Taste & season with salt & additional pepper, if desired.
