Chicken Quesadilla Recipe

This easy recipe is a great way to use up left over chicken. Quesadillas are often served as a vegetarian dish with a lightly hot flavor given to the mixture of cheeses, spring onions and cilantro which are then baked in the oven.
The addition of chicken makes them a real treat.
The Recipe that serves 4
You'll need:-
8 tortillas (Corn or Wheat)
For the filling:-
150 grams of cooked Chicken 175 grams of Feta or white Cheshire Cheese 175 Grams Mozzarella Cheese 6 tbsp grated Parmesan Cheese 6 Spring Onions trimmed and Chopped 1-2 Garlic Cloves crushed 1 tbsp Sweet Chilli Sauce 1 tbsp fresh chopped coriander (Cilantro) 1 Cooked Potato grated coarsely Salt and Pepper Beaten Egg or Egg White Oil for Brushing
Method:-
1. To make the filling, grate the Feta and Mozzarella cheses into a bowl and mix in the Parmesan, Spring Onions, Garlic, Sweet Chilli Sauce, Coriander, Grated Potato and seasoning.
Quick Tip:-
If the Tortillas are too firm to bend in half, dip each one into a pan of gently simmering water until just soft and then drain on paper towels.
2. Place about 1 1/2 tbsp of the cheese filling on one side of each Tortilla and then add some of the cooked Chicken. Then brush the edges with the beaten Egg or Egg White.
3. Fold over and press together well. place the Quesadillas on lightly greased baking sheets and brush each one with a little oil. Cooked in a preheated oven at 190 degrees C/375 Degrees F/ Gas Mark 5 for 12-15 mins until they are lightly browned.
Serve the Quesadillas with shredded lettuce and tomato.
They also serve well cold.
