Chicken Fajita Recipe
An Easy Chicken Recipe

My kids asked me if I could find a Chicken Fajita Recipe that we could cook at home, as we always loved Chicken Fajitas, when we went to our Local Mexican Restaurant,


We had like many other people bought the branded Chicken Fajita spice mix, from our local store, but found it over salty and very powdery.



Eventually I found a Recipe that we all love, and often have with our friends and family as it is a very quick and easy dish to prepare and often have all the ingredients to hand which is great as a last minute dinner choice.


To make Chicken Fajitas for 4 people you will need:-


2 Red (Bell) Peppers

2 Green (Bell) Peppers

2 Tbsps Olive Oil

2 Onions, Chopped

3 Garlic Cloves, Crushed

1 Chili, de-seeded and chopped finely

2 Boneless Chicken Breasts

60g Button Mushrooms, Sliced

2 Tsps Freshly Chopped Coriander (cilantro)

Grated Rind of 1/2 Lime

2 Tbsps Lime Juice

Salt & Pepper

4 Wheat or Corn Tortillas

4-6 Tbsps Soured Cream


Halve the peppers, remove the seeds and place skin-side upwards under a preheated moderate grill until well charred.

Leave to cool slightly and then peel off the skin; cut the flesh into thin slices.

Heat the oil in a pan, add the onions, garlic and chili, and fry them for a few minutes just until the onion have softened.

Cut the chicken into narrow strips, add to the vegetable mixture in the pan and fry for 4-5 minutes until almost cooked through, stirring occasionally.

Add the peppers, mushroom, coriander, lime rind and juice, and continue to cook for 2-3 minutes.

Season to taste.

Heat the tortillas, wrapped in foil, in a preheated oven at 180C/350F/Gas Mark 4 for a few minutes.

Blend them in half and divide the chicken mixture between them.

Top the chicken filling in each tortilla with a spoonful of soured cream and serve garnished with tomato salsa and lime wedges.
