Cauliflower Cheese with Ham

by Sandra
(London)

This is a Easy Recipe for Kids to Cook, it was one of the first dishes I taught my teenage Daughter to cook, so that when she needed to cook for herself, she could do this quick and easy dinner.

By adding Ham to this classic comforting dish, will make great for non vegetarians too.

It is a cheap dinner to make for all the family and I found the Recipe in Delicious - Frugal Feasts, a great recipe book for Families on a budget.

This Cauliflower Cheese and Ham Recipe will serve 4, so you will need to adjust it to suit your own families needs.

1 Large Cauliflower

25g Butter

25g Plain Flour

568ml Carton Semi-Skimmed Milk

150g Mature Cheddar Cheese, grated

3 Tbsps Wholegrain Mustard

6 Thin Slices cooked Ham, shredded

Cut the cauliflower into florets, keeping back the green leaves. Cook in a pan of boiling, lightly salted water for about 8 minutes, or until just tender.

Add the leaves and cook for a further 2 minutes, Drain well and tip into a deep 2-litre heatproof dish.

Meanwhile, preheat the grill to high and make the sauce.

Melt the butter in a saucepan over a medium heat. Add the flour and cook, stirring, for 1 minute.

Gradually stir in the milk, bring to a simmer and cook, stirring, until thickened.

Stir 100g of the cheese, the mustard and half the ham.

Season with Freshly Ground Black Pepper.

Pour the sauce over the cauliflower and scatter the remaining cheese and ham over the top.

Pop the dish until the grill for 3-4 minutes, until the cheese has melted and is golden.
