Caramel Apple Pie

This Caramel Apple Pie also known as Caramel Apple Granny, was a dessert that I would have at one of my local restaurants, not only that I would travel after having dinner in one restaurant to have this as a dessert in the other it is that nice.
I was talking with my children about it the other day and we decides that we would love to make it ourselves, so here is our version of the Caramel Apple Pie.
It has four sections, so is great to cook with the kids as they all get a setion make and can talk about when everyone is eating it.
The four sectios are the sweet pastry base, apple filling, crumble topping and caramel sauce to finish.
So here goes:-
The Base
350g Plain Flour
200g Butter
75g Sugar
Pinch of Salt
Rub the flour and butter together until breadcrumb like and then add the sugar and salt and fornm the pastry into a ball.
Place with your fingers into an 8 inch deep pie dish, until level over the bottom and up the sides, great for kids as no rolling.
Bake for 10 minutes on Gas Mark 4 in the middle of the oven.
Meanwhile make the Apple Filling
2 Large Cooking Apples
1 Tbsp Sugar
Knob of Butter
Peel, core and slice the apples. In a saucepan heat the butter on a medium heat and add the apples and sugar, cook until softened.
Add 1 Tsp of water if needed, don't allow the apples to dry out.
Add the apple filling to the pastry base and make your Crumle Mix.
The Crumble
170g Plain Flour
85g Butter
60g Sugar
Add all the ingredients into a bowl rub together to make breadcrumbs, place on top of the apples and bake in the oven for 25 minutes on Gas Mark 5, until the crumble is golden.
The Caramel
1 Tin of Condensed Milk
5oz Sugar
5oz Butter
Heat all the ingredients in a saucepan until the sugar and butter have melted and thickened, it will all change color and go light brown (caramel color) when it is ready.
Pour over your cooked pie and chill until ready to serve.
This pudding is delicious served so many ways hot with custard, hot with ice cream cold with cream or just on it's own.
