Breakfast Bars



Breakfast Bars A quick and easy Cereal Bar Recipe.

Preparation Time 12-15 minutes

Cooking Time 15-20 minutes

175g Porridge Oats

50g Sultanas

75g Ready to Eat Dried Apricots(finely chopped)

50g Dried Papaya (finely chopped)

50g Pitted Dates (finely chopped)

25g Flaked Almonds

25g Sesame Seeds

2 Tablespoons Clear Honey

3 Tablespoons Smooth Peanut Butter

1 Egg White


A baking tin 25x20 cm, lightly greased and the base lined with non stick baking parchment.


Makes 14 Bars

1.Put the oats in a large bowl.

2.Add all the dried fruit, nuts and seeds and mix well.

3.Put the honey and peanut butter into a small saucepan and heat gently, stirring occasionally with a wooden spoon until smooth.

4.Pour onto the oat mixture and mix well.

5.Put the egg white into a small bowl and beat with a wire whisk until light and frothy.

6.Add the egg white to the oats and mix with a wooden spoon until the mixture sticks together.

7.Spoon the mixture into the prepared tin and press down with the back of the spoon making the surface as even as possible.

8.Bake in a preheated oven 190c(375f) Gas 5 for 15-20 minutes until the top is golden and feels firm to the touch.

9.remove from the oven and let cool slightly in the tin before cutting into 14 bars.

10.Let cool completely before removing them from the tin, store the bars in an airtight container for up to 5 days.
