Blueberry Muffin Recipe
The kids will love them..



The Easiest Blueberry Muffin Recipe

Light and Fruity, these well known Muffins are delicious at anytime of day.

Preparation Time 10 minutes and Cooking Time 20-25 minutes.

This recipe makes 12 muffins.

180g Plain Flour

60g Caster Sugar

2 Tsp Baking Powder

1/4 Tsp Salt

2 Eggs

50g Butter, Melted

175ml Milk

1 Tsp Vanilla Essence

1 Tsp Grated Lemon Rind

175g Fresh/Frozen Blueberries

1. Preheat your oven at 200C (400F) Gas Mark 6, line your muffin pan with paper cases or lightly grease.

2. Sift the flour, baking powder and salt in a large mixing bowl.

3. In another bowl whisk together the eggs, milk, melted butter, vanilla and the lemon rind.

4. Make a well in the center of the dry ingredients and pour in the egg mixture.

5. With a large metal spoon stir in the flour until just moistened, but not smooth.

6. Add the blueberries to the muffin mix and gently fold in try not to break the blueberries.

7. Spoon the mixture into the muffin pan, leave enough room for the muffins to rise.

8. Bake in the oven for 20-25 minutes until the tops spring back when touched lightly.
