Best Moist Chocolate Cake Recipe

by Annie
(Norfolk U.K.)

This is the Best Moist Chocolate Cake Recipe, it is very rich and you will always want more.

I decorate this chocolate cake with chocolate shavings and chocolate sweets.

I made it last Easter and topped it with some mini Easter eggs.

You could also make this as a Chocolate Christmas Cake if you wish and decorate with white chocolate shavings and robins, or snowmen.

I hope you like my families best moist chocolate cake recipe.

110g Sifted Self Raising Flour

110g Golden Caster Sugar

2 Tablespoons of Cocoa Powder

1 Teaspoon Baking Powder

2 Large Eggs

110g Softened Butter

1 Tablespoon Milk

For The Topping

150ml Soured Cream

150g Dark Chocolate

Grated Dark Chocolate

Prepare two 7 inch sandwich sponge cake tins, by greasing lightly and line the bases with baking paper.

Preheat the oven 170C/325F/Gas Mark 3.

Sieve the flour, baking powder and cocoa powder into a large mixing bowl.

I then add all of the rest of the ingredients and mix with an electric hand whisk for a few minutes until it is smooth.

Spoon the mixture into the 2 tins and bake in the oven on the same shelf for 25-30 minutes.

When you take the cake out of the oven remove them from the tins and place on a wire rack to cool.

Remove the lining paper to this gently as you don't want to rip the sponge.

For the topping, break the chocolate into a bowl and heat over a pan of simmering water.

Add the soured cream and stir until the mixture is smooth and creamy.

Remove this from the heat and leave to cool.

Once it has cooled spread half of the chocolate mixture on the inside of the sponges.

Place the two sponges together and spread the remaining mixture on the top.

Decorate your cake with the decorations of your choice.
