Best Chicken Soup Recipe

My Mom always made the best chicken soup when I was ill, not sure why but it always made me feel better. I now make it for my family and they love just as much as I did.

Here's my Mom's Best Chicken Soup Recipe.

Serves 4

3 Tbsp Butter

4 Shallots, chopped

1 Leek, sliced

450g Skinless Chicken Breasts, chopped

600ml Chicken Stock

1 Tbsp Chopped Fresh Parsley

1 Tbsp Chopped Fresh Thyme

175ml Double Cream

Salt and Pepper


Melt the butter in a large saucepan over a medium heat. Add the shallots and cook, stirring, for 3 minutes, until slightly softened.

Add the leek and cook for a further 5 minutes, stirring. Add the chicken, stock and herbs, and season with salt and pepper.

Bring to the boil, then lower the heat and simmer for 25 minutes, until the chicken is tender and cooked through. Remove from the heat and leave to cool for 10 minutes.

Transfer the soup to a blender and process until smooth. I have to do this in batches as it has over flowed before.

You will need to wash out the saucepan and then return the soup and warm over a low heat for 5 minutes.

Stir in the cream and cook for 2 minutes, remove from the heat and serve straight away.
