Beef Lasagna Recipe

by Wendy
(York)

Beef Lasagna is a great dish to cook for your family, it is very filling and can be served with a Green Salad and Garlic Bread. I also double this recipe and freeze it down so that I have some homemade ready meals to hand when I am busy working and don't have time to cook.

For the Meat sauce you will need:-

25g Butter

1 Tablespoon Oil

50g Mushrooms, Chopped

1 Medium Onion, Finely Chopped

1 Medium Carrot, Grated

1-2 Cloves Garlic Crushed

350g Ground Beef

300ml Beef Stock

4 Tablespoons Tomato Paste

1 Bay Leaf

Salt and Pepper

For the Cheese Sauce you will need :-

25g Butter

25g Flour

300ml Milk

Salt and Pepper

50-100g Cheese, Grated

1 Teaspoon Ready Made Mustard

175g-225g Lasagne Sheets and some Grated Parmesan Cheese to finish off the dish.

To make the meat filling

Heat the butter and oil in a pan, add the vegetables and cook gently for 3 to 4 minutes, then add the beef.

Blend with the vegetables and stir well until the small particles of meat are separated.

Add the rest of the ingredients, bring to simmering point and simmer for 35 to 45 minutes, then remove the lid so the excess liquid evaporates.

Stir well as the sauce thickens.

To Make The Cheese Sauce

Heat the butter in a saucepan, stir in the flour, cook for 2 to 3 minutes do not have the temp too high as you do not want the butter or flour to burn.

Blend in the milk and stir as the sauce comes to the boil, and continue stirring until thickened.

Add the cheese, do not cook any longer as you will over cook the cheese, add the mustard and season to taste.

Once the Meat Filling and The Cheese Sauce are made you are ready to assemble your Beef Lasagna.

Get an ovenproof dish large enough to fit your lasagna.

Check the packet of Lasagna Sheets to see if you need to cook it before you build your dish, it will depend on the type of pasta you have bought.

I tend not to boil my pasta first I find that it cooks enough when baking in the oven.

Place a layer of lasagna sheets over the base of your dish and then layer with some meat sauce and then some cheese sauce, continue like this until you finish with a layer of cheese sauce and add your grated parmesan cheese.

Heat through in a moderate oven (180C/350F/Gas Mark 4) for approximately 30 minutes.

Serve straight away with Garlic Bread and Salad.

If you do want to freeze it for another day allow it cool and portion into Freezer Containers and Label with the date and name of the dish.
