Banana Muffin Recipe
Great for Breakfast, Snack, or in your Lunchbox



Banana Muffin Recipe

If you are making these for kids to enjoy you may want to leave out the cinnamon and nutmeg as this can be a little over powering.

This recipe will make 12 smaller muffins or 9 larger ones, it is really up to you.

3oz Melted Butter

9oz Self Raising Flour

1 Tsp Baking Powder

1/2 Tsp Bicarbonate of Soda

Pinch of Salt

1/2 Tsp Grated Nutmeg

1/2 Tsp Ground Cinnamon

4oz Caster Sugar

1 Tsp Vanilla Essence

2 Medium over ripe Bananas

2 Eggs

4 floz Milk- skimmed Preferred.

1. Pre heat your oven at 190C (375F) Gas Mark 5

2. Line or slightly grease your muffin pan.

3. Melt your butter and mash the bananas in a bowl.

4. Sift the flour, baking powder, bicarb, cinnamon, nutmeg and sugar in a large bowl.

5. Beat the eggs with the milk, vanilla and add to the bananas.

6. Make a well in the center of the flour and add the butter and the egg mix.

7. Stir together until the flour and egg mixture just combine don't over mix, it doesn't matter if there is still some flour showing.

8. Put the mixture into the muffin pan for larger muffins fill 3/4 full they will rise over the top of the muffin pan.

Bake for 20-25 minutes until firm to the touch, golden brown.



We have made these Muffins a numbers of times and over the last few attempts we have added a toffee frosting which really works and sprinkles with tiny fudge pieces make a great treat at a kids birthday party.
